====パンの廃棄ロスゼロへの挑戦====

パンの需要予測は他の食品に比べ少し難しいです。

パン屋さんのパンはそのほとんどが前日のお昼過ぎに仕込みを始めます。
つまり前日のお昼には翌日いくつ売れそうか判断して生産量を決めなければなりません。

多く作りすぎるとたくさんの廃棄を出すことになるし、少なすぎると夕方以降にしか来られないお客さんをガッカリさせてしまいます。

でも日々様々な要因によって来店するお客さんの数も購入数も変わるので、その予測は本当に難しく、シェフの悩みの種となっています。

この予測の難しさが、廃棄パンが出続ける大きな要因の一つです。

近年、この廃棄パンにフォーカスしたWebサービスや店舗の取り組みがメディアで取り上げられる機会も増えてきました。

パンタベルでは、「予約注文」を軸にこの問題解決に挑戦します。
